Coconut Dessert: Make it Monday

This quick and easy Coconut is a true treat!

Coconut Dessert Recipe


Ingredients: 
Desiccated Coconut - 1 Cup
Milk - 1 Cup
Sugar - 4 Tbsp
Raisins- 3 Tbsp Chopped
Cardamom - 2 to 3 Pinch
Saffron - 5/6 Strands
Extra Virgin Coconut Oil- 1 Tbsp
*You can adjust the Sugar and Raisins as per your taste

Method:

  • Heat the milk on medium flame till it is reduced to one-third, this might take a while
  • Add Saffron, stir for a few seconds
  • Add the coconut, Sugar and Cardamom 
  • Add Coconut Oil, Stir till everything blends in nicely and the mixture thickens
  • Enjoy!

Coconut Laddu (Balls) Indian Sweet: Make it Monday

Coconut Semolina Laddu (Balls) Indian Sweet

This is one of my favorite Indian sweets, mainly because I can adjust the sweetness and it will still taste good. And I also love the mild coconut taste! Also this one is really easy to make.
So here is the recipe...





Ingredients:

3/4 Cup + 2 Tbsp - Desiccated Coconut
3/4 Cup - Semolina (Sooji/Rawa)
1/2 Cup - Sugar
1/4 Cup - Water
1 Tbsp - Chopped Raisins
2 Tbsp - Light Olive Oil
1/3 Tsp Cardamom Powder

Method:
  • Heat the pan to roast the semolina, after 7-8 minutes add the oil and roast again till golden brown.
  • Meanwhile side by side boil the water and add sugar to it, simmer for a good 10-12 minutes.
  • Once Semolina is golden, Add the Coconut to it, roast for 2 minutes. Turn it off.
  • Add the boiling water to this mixture and quickly cover the pan with lid.
  • Let it rest for 30 mins. This will let the semolina to soak the sugary water.
  • The mixture should be of consistency to shape into balls, if not add some more hot water.  
  • Lastly add the raisins and cardamom powder to the semolina mixture, stir the mixture nicely to combine everything. 
  • Put the remaining coconut in a small dish.
  • Shape the mixture into small balls, and roll in Desiccated coconut.
