Coconut Semolina Laddu (Balls) Indian Sweet
This is one of my favorite Indian sweets, mainly because I can adjust the sweetness and it will still taste good. And I also love the mild coconut taste! Also this one is really easy to make.
So here is the recipe...
Ingredients:
3/4 Cup + 2 Tbsp - Desiccated Coconut
3/4 Cup - Semolina (Sooji/Rawa)
3/4 Cup - Semolina (Sooji/Rawa)
1/2 Cup - Sugar
1/4 Cup - Water
1 Tbsp - Chopped Raisins
2 Tbsp - Light Olive Oil
1/3 Tsp Cardamom Powder
Method:
- Heat the pan to roast the semolina, after 7-8 minutes add the oil and roast again till golden brown.
- Meanwhile side by side boil the water and add sugar to it, simmer for a good 10-12 minutes.
- Once Semolina is golden, Add the Coconut to it, roast for 2 minutes. Turn it off.
- Add the boiling water to this mixture and quickly cover the pan with lid.
- Let it rest for 30 mins. This will let the semolina to soak the sugary water.
- The mixture should be of consistency to shape into balls, if not add some more hot water.
- Lastly add the raisins and cardamom powder to the semolina mixture, stir the mixture nicely to combine everything.
- Put the remaining coconut in a small dish.
- Shape the mixture into small balls, and roll in Desiccated coconut.
