Mango Jam - Make it Monday: Recipe of the Month

Here is one more Mango recipe, let's make the most of it while they are in season!

This time a 'Sweet' one with a surprise ingredient. My Grandpa used to make this Jam all the time when we were little!

As far as I am concerned I love anything Mango and this recipe is a childhood favourite.

Ingredients-

Semi-ripe Mangoes- 2 Medium
Sugar - 1 Cup or as per your taste
Saffron Strands- 8 or 9
Cardamom Powder - 1/3 Tsp
Lemon Juice - 1 Tsp
Water as needed

Method-

• Peel and grate the Mangoes
• Transfer the pulp to a non-stick pan and cook on medium heat
• Add the Sugar gradually
• Cook till the mixture reaches a thick consistency, taste to see if you need more sugar as this depends on how sour your mango is
• Add Saffron, Cardamom and Lemon juice
• Keep cooking till the mixture thickens and becomes transparent and reaches Jam consistency, add water if required.
• Cool and Store in a jar in the refrigerator

Life...

As I am much better now after feeling terrible health wise in the first trimester. Things are getting back to normal. I have finally started blogging and also paying some attention to my shop. With a changed focus instead of 'Craft workshops' we are now going to 'Baby Seminars and Parenting workshops'!!

We attended our first baby workshop last Saturday at The Star Gallery hosted by The Sunday Times. It was informative and fun! We also got some lovely goodies in the goody bag! As we haven't started any shopping yet, it was exciting to get some baby stuff!

Hot & Sweet Mango Chutney- Make it Monday: Recipe of the Month

Mango is my Favorite fruit! And Mangoes are in season!! And it is also the best time to get out and enjoy some barbecue or go picnicking...So let's make some yummy chutney to pair with it. You can also enjoy it as a dip or side with any crispy or finger food! 

The best part about living in Singapore is that we get Mangoes almost year long!

Ingredients:

Semi-ripe Mango - 1 Medium

Ginger Paste - 1/4 Tsp

Garlic Paste - 1/4 Tsp

Sugar - 5 Tbsp + Water as needed

Red Chilly Flakes - 1 Tsp or as per Taste

Vinegar 1/2 Tsp

Salt - to Taste

Method:

• Cut the Mango into thin slices
• Mix the sugar with Mangoes and a little water till the Mangoes float in the mixture
• Heat it on medium flame till the mangoes become a bit soft.
• Taste to check, if it is too sour add some more sugar
• Now add chilly, ginger-garlic paste, vinegar and salt
• Cook till the mixture thickens and the mango slices turn transparent
• Add more water and boil if you want the chutney to be more flowy
• Store in the refrigerator

Coconut Dessert: Make it Monday

This quick and easy Coconut is a true treat!

Coconut Dessert Recipe

Ingredients: 
Desiccated Coconut - 1 Cup
Milk - 1 Cup
Sugar - 4 Tbsp
Raisins- 3 Tbsp Chopped
Cardamom - 2 to 3 Pinch
Saffron - 5/6 Strands
Extra Virgin Coconut Oil- 1 Tbsp
*You can adjust the Sugar and Raisins as per your taste

Method:

• Heat the milk on medium flame till it is reduced to one-third, this might take a while
• Add Saffron, stir for a few seconds
• Add the coconut, Sugar and Cardamom 
• Add Coconut Oil, Stir till everything blends in nicely and the mixture thickens
• Enjoy!

Weather has started to get a bit hot here, well for Singapore it is pretty much same all year, but past few months were quite good and cool! With increasing temperatures, the haze might come back, so enjoying evenings as much as we can!

Life...

Good, so far! I have been devoting more time to things I like to do. I mean seriously, I started using Facebook and Instagram recently, and I must admit I was getting addicted to it. I was literally checking my phone every few minutes!!! Although they have been quite helpful. but Like a CRAZY person waiting for likes...I was loosing it! Ultimately  my main focus is promoting my Shop and things I like to do, I am still working on it. Loved the recent article by Duni about Instagram, so helpful.

So know, I am doing a phone Detox:-

• Checking it once in the Morning, but not as soon as I wake up
• Post anything if I want to in the Morning, reply to urgent mails
• Then forget about hanging with my Phone every minute of the day, Only take Calls
• Then Check at Night, that too not right before sleeping, return likes, post if I have to, new likes 
• I have turned off all Sound notifications (except Sell on Etsy, coz it makes U Happy!, Right!!)
• No more posting every single personal detail or 3 to 4 posts a day, personal things once in a while, more DIY and business oriented and focusing on my love of Nature, Gardening & Photography.
• My phone can rest more now and me too!

Honestly, I haven't used my DIY Eco Phone Stand in ages

Hope I stick to it...forever!!!!

And it was Solar Eclipse today! Partial here but was so cool, we watched safely using the binocular method!

Life...

CNY events are now wrapped up everywhere, we got to enjoy one last round of fireworks during the two day Chingay Parade! Luckily we got to enjoy it from our balcony this time at a different point! We had been to the parade before it is really fun, multi-cultural & colorful event!

It was literally Fireworks February!

And enjoyed the Lovely Full Moon!

Past week we had quite a few rainy days, and at such time I love to Draw sitting at my Window Seat with a cup of Green tea!
